Crockpot Chicken Cacciatore

Adapted from Not Your Mother’s Slow Cooker Cookbook

16oz jar Marinara
3 lbs chicken breasts
1 green pepper, cut into big chunks
1 package of sliced mushrooms
1 onion, cut into big chunks
1-3 cloves of garlic

Pour half the marinara in the crockpot, top with chicken breasts, then veggies, then remaining marinara and garlic. Cook 2 hours on high or 4 hours on low. Take the chicken out and shred it (with two forks) or cut into big chunks. Return to the Crockpot, mix well and continue cooking until chicken is cooked through.

Our favorite way to serve this is shredded on big sandwich rolls. It also works well in chunks over noodles. Slow cookers vary a lot – don’t leave it alone in the later hours the first time you make it. This recipe can be doubled.
